UT Health Science Center is best, and well-respected WORLD-WIDE. Professors are VERY easy-going, and you'll get lots of hands-on experience with a variety of cases, because they're a public, state run school. They also do discounted work for community members, which is what exposes you to more unique problems / cases.
Sure Baylor is well respected too, but their respect comes largely from a $$ standpoint because they're HUGELY expensive!
Easy to get around in the UTHSC medical center, discounts on everything from housing, to meals, to car repairs etc. Just show ID. Community is great, lots of things to do, friendly people!
Good luck whatever your decision, but I'd go with UTHSC, you'll probably save a few bucks too, which can't all bad in today's economy.
